- 2 waffles (I used Nature’s Path GF Wildberry)
- 1 chicken breast
- 1/2-1 c. frozen blueberries
Make the blueberry sauce while the chicken breast cooks. I pan-cooked mine.
To make the blueberry sauce, add the blueberries to a skillet on medium heat. As they start to thaw and release their juices, turn the heat up to medium-high and cook until reduced and a thick sauce forms.
Toast the waffles. Place chicken on top and scoop the blueberry sauce on top of both.
