Baked Chicken Strips and Ice Cream

Today was an off day from working out. Meals were pretty simple after a full day of class.

Dinner was assembled pretty quickly. Coat raw chicken in bread crumbs or gluten free cracker crumbs in my case, bake for 8 mintes at 400F, then broil for 3-4 minutes for the perfect doneness. Served with some broccoli, edamame and some Annie’s Chipotle Barbecue sauce (spicy!)

Dessert was by my two favorite guys. 😉 Ben & Jerry’s Imagine Whirled Peace. I actually thought I’d be disappointed by this flavor, but it’s up there as one of my favorite. Caramel and sweet cream ice cream, swirled with fudge peace signs, and toffee cookie pieces.

LOTS of toffee cookies pieces. Really reminded me of a toffee cookie dough ice cream. I loved it!

What’s your favorite ice cream flavor and brand?
