Where I live now there’s not really and good Mexi(meri)can restaurants, so when the craving for quesadillas, enchiladas, tacos, nachos, what-have-you hits I’m usually left to my own resorts to create something that’s different and healthy, but not quite as spectacular as the real deal.
Pan-cooked chicken, 1 corn tortilla, rice and beans, diced yellow tomato, lettuce and fresh cilantro with a dollop of greek yogurt for sour cream.
There you have it – a simple deconstructed Mexican plate. Was out of salsa or that would’ve been a must!

I love enchiladas so I may have to pick up some of the Amy’s Frozen ones….almost as good as fresh.
