Almost Chicken Parm

And by “almost,” I mean because it’s not breaded or fried. It is, in fact, healthy. πŸ™‚

Almost Chicken Parm:

  • Chicken breast
  • Marinara sauce/tomato sauce
  • Cheese of choice
  • Dried herbs (basil, oregano, thyme, etc.)
  • bread crumbs (optional)

Pre-heat oven to 375F. If you’re using bread crumbs, go ahead and coat your chicken in them. If not, bake/grill chicken until cooked through – about 8-10 minutes the first side, then flip and cook a few minutes more.Β

While the chicken is cooking, prepare your sauce. If using just plain tomato sauce saute up some onions and garlic, maybe some zucchini too and add to the sauce.

When the chicken is done cooking, place it in a baking dish (8×8, for example). Put a small layer of marinara sauce on the bottom. Place the chicken in the dish and cover with marinara sauce. Top with cheese. Bake 8-10 minutes, then broil 1-2 minutes to make sure the cheese is all melted.

Sprinkle with dried herbs.

You’ll notice no melty cheese on top of mine…I used feta and placed it under a layer of marinara sauce. However you do it is fine; it’s delicious either way. πŸ˜‰
