Recipe: Raw Chocolate Buckwheat Bars

After seeing Gena’s post on a Buckwheat Chai Energy Bar I was inspired to create this with the ingredients I had on hand instead – no Vega chai? Not a problem. Just used I did have. Feel free to sub out the nuts, seeds or dried fruit. And medjool dates are a must. I used the smaller (less chewy) deglets, and they did not work out so great. They don’t alter the taste, but rather the texture, and the bars don’t stick together as well.

Raw Chocolate Buckwheat Bars
serves 12

  • 1 c. raw buckwheat, soaked 4-6 hours
  • 1/3 c. raw pumpkin seeds
  • 1/2 c. raw almonds
  • 1 c. raw dates, pitted
  • 1 scoop of Vega Chocolate Whole Food Health Optimizer (or 2-4 tbsp raw cacao powder, or chocolate protein powder)
  • 2 T. raw honey, maple syrup or agave
  • 1 T. coconut oil

Soak the buckwheat in a bowl for 4-6 hours or overnight. Rinse off afterwards – it will be a little bit slimy, but that’s normal.  Just rinse it off.


    Pulse the buckwheat and the nuts and seeds in a food processor until roughly chopped.


    Add in the remaining ingredients and pulse until combined.

    Scrape out of the food processor into a 9×9 baking dish pushing down until it comes together.

    Cut into 12 bars and enjoy!

      Hmmm…I have a bag of buckwheat but nothing else. I am not sure I can really “sub” enough in there. 🙂
