Recipe: Simple Salad

Sometimes the most simple meals and sides at the best. Sometimes I get a little crazy when I make salads, opening the fridge, seeing what I’ve got in there and throwing anything and everything onto a bed of greens without rhyme or reasons. I usually end up with a salad that’s just too big to finish it all and just has too much going on.

A nice simple salad to start or end your meal is sometimes best. Or if you’re eating something a little on the heavier and rich side, this may be a nice accompaniment to that.

Simple Green Salad

  • a good handful of greens (I love the spring mix blend)
  • drizzle of a good quality extra-virgin olive oil (or substitute walnut oil, macadamia oil, hemp oil or another unique oil of good quality)

Drizzle the greens with a little olive oil and if you’re feeling a little adventurous add a pinch of course ground sea salt.
