Staying indoors.

The weather forecast for this weekend in TN is not pretty. In fact, it’s down right cold, rainy, and snowy. All weekend.

It was pretty when I first woke up, but soon after starting raining, and it turned into a slushy mess.


Perfect morning for a hot bowl of pumpkin oats. Topped with granola, almond butter, Crofter’s jelly, and some dark and white chocolate chips. I’m addicted.


Pumpkin Oatmeal

  • 1/2 cup rolled oats
  • 1 tsp chia seeds
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp raisins
  • 1/2 – 3/4 c. pumpkin
  • 1 tbsp almond butter
  • 1 tbsp jelly
  • 2 tbsp granola
  • 1 tbsp chocolate chips

Combine the oats, chia seeds, milk, water, spice, and raisins in a small pan and cook ~10 minutes, until desired creaminess.

At the end of cooking, stir in the pumpkin to heat it through.

Top with desired toppings.

I worked a little, slept, lifted weights, and am now watching Glee while studying. And reading up on my favorite artist: The Ready Set. ❤

  4. I’m sitting in Knoxville looking at flurries out my back door. I don’t think it’ll stick to anything, but it makes me not want to go outside!

    I’m pretty sure eating hot pumpkin oatmeal would be on my list too. 😉

    that oatmeal is blowing my mind. I need to buy more oat creating ingredients. when it’s cold and rainy I love watching movies or a whole series of a show while eating pizza. 🙂
