Grilled Chicken with Blueberry Sauce

As promised (though maybe you don’t remember), I hinted at a new recipe that I tried and LOVED!

Grilled Chicken and Onions with Blueberry Sauce

serves 1

  • 4 – 6 oz grilled chicken, seasoned with S&P
  • 1/4 onion, grilled
  • 1/2 cup blueberries, frozen

Blueberry Sauce

Heat a small non-stick or stainless steel skillet over medium heat. Add the frozen blueberries and cook down until they’ve reach a sauce consistency. You may need to add 1 tbsp of water once the pan heats up.

Give it a try! It really does make a fantastic combination. 🙂

I enjoyed mine with a massaged kale and avocado salad, and a sweet potato.

The blueberry sauce is also great on top of pancakes. 😉

Now that blueberries aren’t really in season anymore, I buy frozen. I love Wyman’s because they’re wild blueberries. They’re slightly smaller and full of flavor. I find myself craving them at least once or twice a day, they’re that good.
