This week has been pretty dull in the meal department since I’ll be in Seattle this weekend – that means I haven’t grocery shopped and have been eating up what’s in the fridge and pantry (trying to clean out my pantry a little too).
With all the weight lifting I’ve been doing my appetite has been a little crazy.
Tuna-avocado sandwich on Udi’s GF bread with kale chips and butternut squash puree.
Avocado is a healthy fat to add into tuna or salmon for some richness in place of mayo.
I’ve been eating a bunch of stir-fries lately trying to get more vegetables in.
Red onion, garlic, green beans, cabbage, limas, brussel sprouts.
